Tiramisu Italiano
NOTE: zabaglione takes about 5-7 minutes over the double boiler to come to 160 degrees, dont' put it in an aluminum foil tray or cover with aluminum, I thought it had a metalic taste

Risotto Cakes
Have ready cooled risotto in the refrigerator. Form into disks and dredge in flour, egg wash then Panko. Set on a cooling rack and let sit for about 15 minutes in the refrigerator. Brown on both sides in a non-stick skillet with olive oil.
You can add cheese to the centers when forming into disks and do the same procedure, but after they are golden brown put them on a sheet pan and into a 350 degree oven for about 8-10 minutes to ensure the cheese it heated through.

Crabbiless Crab Cakes

I also made this same idea but I substituted some whole fat Greek yogurt and zero fat Greek yogurt for the ricotta because I didn't have any. I made it with the "herbeta" that Tony got from Tom's yard in place of the Swiss chard and because I was worried that it would be too liquidy I put a handful of Panko into the mixture before adding it to the center of the crust (which I didn't do free form, I did it in a pie dish) and it worked very well.
